Here’s a video I made on how to attach the dowel. The gist is that I weave it in by crocheting over the dowel. I use a half double crochet stitch to do this.

Before I get in to the ways you can make your piece lay flat, it’s important to note that there are a few reasons your might have wonky edges. The first is that it’s just natural for things to not be perfect right after you’re done. The second could be that you used yarns of different weights or materials. Different yarns have different gauges, so it’s important to make sure you’re using the same type of yarn for every color in your piece.
Here are a few options to help your piece lay flat. The first thing you can do is block it. The easiest way to block something is to steam block it. Here’s the link to the mini tutorial I did on steam blocking. If you don’t have something to steam it with, you can also wet block it - it just takes more time to allow for drying. The second and most easiest thing you can do to make it lay flat is to literally just pin it to the wall. I use t-pins, but any tack or needle will do. Lastly, you can attach a dowel to not only the top, but also the bottom of the piece. The weight will help anchor it down.
